Default Milled 6.0's with ls6 cam.

I am thinking about putting heads and cam on my car. The setup I am thinking about is 6.0 heads milled to get 11.0:1 with a ls6 cam. Would I be able to have this setup as my daily driver? I would always have at least 92 octane gas in it but it does get to be 100 plus here in Texas as we all know.

The reason I picked the ls6 cam is because it needs to be shifted at about where I want to shift and it's cheap but still will put out the power I want. Plus it would be a and something most people haven't done.

How much do I need to mill off the heads to get 61cc's? Do I need to weld the chamber to 3.900? I see that it will help flow out but from what I have seen it's only like 10 cfm. Is it worth it? Where do you get them welded at and how much does it cost?
