The largest stroker kit I've seen for the 5.3 is a 4.0" stroke which makes it 363 CID (5.9L). You can bore the 5.3 block out to 5.7 bore size and then use a LS1 stroker kit for 383 CID (6.2L).

You can do 4.125" stroke, but you probably wouldn't want to use it with a lot of boost.

I'll probably run 12-14lbs, I have a meth kit set up and I'll run it 9.5:1

I just installed a 4" crank in my LM7 and the rod bolts have maybe .060-.070" clearance to the cylinder wall edges. A 4.125" crank will likely require some clearancing, but its probably not a big deal.

I'd stick with the 4" crank then. With a blower, you probably won't even notice the difference in displacement.

I'd go with a 4", once you go passed that wear is really increased and you do have to do a lot more clearancing
