I would want to see some of his work and be able to verify gains from his porting on other LS heads .Gen I SBC and Ford heads don't count.If he going to polish the exhaust side that's OK , but if he says he going to polish the intake forget about it, don't let him touch them.

Like everyone said, polishing the intake runners is a no no. A rougher surface on the intakes will help with fuel atomization. Polishing the exhausts will actually benefit you, but really isn't worth effort, because they will have carbon build up in no time anyways.

If you're having a set of heads hand ported, there will be some polishing involved. That doesn't mean it's going to be mirror smooth, though.
CNC machined ports are not usually hand polished because material is removed by a different method, which leaves a pretty decent surface finish, however, almost any CNC machined port can be better with a little hand porting.

I like to polish the runners up to a mirror finish do I can see any imperfections better, then when I'm happy with it I take the intake runner back down with 80 grit and the exhaust to 220 grit......you dont even want a shiny finish on the exhaust either...if you leave a shine you will get more turbulence
