Does this sound like a warped head? 04 GTO

After I did my cam swap, I noticed a coolant smell from my exhaust. Very strong at times. The car runs like it's on a light switch. At times it'll idle great, nice and choppy and very crisp. And then, like someone hit a button, the idle will totally drop off, it'll sputter and then shoot back up to idle RPM. When it does this, the smell from the exhaust gets really bad.
I pulled the heads a second time and installed new gaskets again and nothing changed. The plugs look fine. The smell from the exhaust is changing from a coolant smell to a sulfur smell. I'm assuming that's the coolant gumming up the cats.
Oh btw, I flushed my entire system of DexCrap and filled it with the nice green stuff.

Def either bad head/gasket or incorrect clamp load...pull them off or you can use this testing fluid (block tester) that you put in your coolant and it turns a certain color if combustion gases mixed with the coolant. You can get it from autozone on the "loan a tool" program for free (I know that sounds weird but I'm serious lol)
