Default what should 98 Z28 water temp be at?

I had a 99 Z28 and bought it new and the temp always read a little under 210 but never moved. I sold the car about a year ago and just purchased a 98 model but the temp is always moving what is normal temp, are the stock gauge accurate and what's the highest temp I should be concerned with. thanks in advance for any help.

the 98 is the only car with a temp gauge that actually functioned correctly. the 99-up were dummy gauges as long as it stays below 210 your fine.
