Brian, you need to go and get a socket and remove the plugs and start eliminating potential issues.
If it were me, I would have been checking and topping up coolant for a week, and if I saw the car use a quart every day or couple days there is a substantial leak or a something else is wrong, simple as that. Sounds like your rear main seal is leaking, could be from excessive crankcase pressure.
As I said before, I'd run hoses instead of breathers, and I'd have those hoses run into a catch can your blower car will always have more crankcase pressure. I ditched my breathers on the old 422ci because they would drip and I did not want to have a fire.

Yea I might eventually do that John w/the new motor...
But, today I pulled out 2 plugs....#5 and #7...#7 was the cylinder that the head gasket blew on...it looked normal except for the greenish color to the tip...
Also I was thinking...my AFR gauge doesn't move, one light stays on stuck in the green section...doesn't work like the normal AFR gauge would to where it would bounce back and forth...
Would an O2 sensor possibly cause the car to pop/lag like that...

I'm gonna have the car throughly checked out soon....but signs so far are pointing towards a new motor..
I would really like to keep the block around...in that case I would hope its the head gasket and not the block....even though valvegod sells blocks for like 500 right?

Well I don't have anything to scan my 02's, but I really don't drive the car that much after this whole sputtering/laggin thing came up, but one night of an hours worth of driving the coolant level was the same....really didn't notice much change, and from before how I thought the radiatior was only 1/2 full it isn't, its about 3/4's full, but still low...
Car is still using oil....
The AFR gauge doesn't really work, could that be in the tuning?

Heres an update....
Put a scan tool on the car today, code that showed up that caught my eye was..
Bank 1 sensor too lean & Low voltage
So this means the 02 sensor is bad I assume..
Could this cause the car to go lean enough to cause a head gasket to pop again, the car still gurgles and stumbles under acceleration...
Car goes into the Shop April 9th for a full diagnosis...
