Knock Sensor/ Head Reinstallation

Hey Guys,
I posted a thread a month ago about internal coolant loss in my 2006 Silverado 5.3 B and will be pulling the heads off in a 2 weeks, replacing the knock sensors, and new water pump assembly while everything is apart.
Im taking the heads to a local machine shop to be cleaned, pressure tested, resurfaces, have the valves cut and all new seals for $250. I wanted a few opinions on my final parts list and opinions on head bolts.

*Fel-Pro Head Gasket Set

*Napa Water Pump+Thermostat Housing Assembly (New & Includes Gaskets)
*(2) AcDelco Knock Sensors (new grommets included in Felpro Kit)
Now for the head bolts, Ive been doing some reading up on them and everyone is saying to go with ARP, since they can be reused if the need arises, which is hopefully never again.
Ive looked up a few GM vs ARP threads and from what I understand the GM bolts are a pain in the *** to torque, being that its a multistep tq procedure. So should I stick with GM or Felpro Bolts or just spend the extra money on ARP? If I do go with ARP how will the torquing process change? Ive also heard people saying they need retorqued after one heat cycle.
I found these on summit, can anyone verify these are the correct ARP's for a 5.3 "B" with 799 heads?

The description says "Fits engines with all same length head bolts. Will not fit 1st. Gen with different length head bolts"......though the picture shows 2 different length bolts and the motor takes 8mm & 11mm head bolts?
Sorry for the rookie questions, a good friend is helping with the job who is a extremely knowledgeable guy, just figured Id get some input from y'all.
