Default 5.3 lack of power

I have a 2000 Tahoe with the gen 3 5.3.I recently added new long tube equal leanth headers,deleted cats and rear o2s.after I got it put together I took it for a drive.about a half mile into it,it started acting like it wanted to stall.pedal to the floor and no power what so ever.idles OK but when in drive I get no power.
What could cause this issue.I relatively good at working on vehicle but diagnosing them I suck at.

Any codes? Did you make sure all the upstream o2s were connected properly?

How old are the front o2's?
I ran open headers when I did my ls1 exhaust for a little while (30 miles to get a custom exhaust) and my o2's were toasted. They had around 100,000 miles on them though so they probably needed changing anyways. They didn't start really dying like your describing until a few weeks after but cars are weird man. No two are exactly alike.
