Default Loss of power issue.. please help.

what goin on gents, so I have a 00 Z28. A couple months back I was driving and then out of nowhere the car started spittin an stallin and spudderin.. didnt know what was goin on. The oil was fine fuel was fine. I couldnt go faster than 45 mph in 2nd gear pedal was to the floor. Going up hill had to be in 1st gear was 3k rpm and 20 mph, both gears wont go above 3k rpm. thought it might be my MAF so replaced that, then had to buy a new fuel rail due to lines dry rotting so i replaced those still having the same issue. except now i can have the peddle to the floor 4k rpm wont go above 20 mph, rpm or mph wont go any higher so Im stuck on what it could be. The mods are BBK SSI intake Manifold, BBK HI-Flow Fuel Rail, BBK 80mm throttle body, K&N CAI, 3in SBC Longtube Headers, Magnaflow hyperflow cats, EGR Delete, Jet Performance computer chip and Jet Performance MAF.. I have had all the mods installed and been driving it for over a year. Just all of a sudden lost all power. Im hoping it has nothing to do internally.. but im at a loss and stopping point please help. Thanks

Jacked up coolant temp signal will make the car run all sort of weird.
