2000 5.3 truck block deck & cyl head surface

I am in the auto recycling business in San Francisco. I recently brought home a 2000 5.3 truck engine to rebuild and have questions about some electrolysis on the deck surface of the block and on the cylinder heads near the water jackets.
Can the deck & the head surface just me surfaced some and no worry, or will I need to get thicker gaskets.

They can be cleaned up a little but not sure it would remove all the pitting.
You can use a product such as indian head to seal the gasket to the deck.
A engine from 2000 year would have had a Graphite head gasket any way, so depending on what your doing you could go back with that style gasket.
