Default 2.10 Valves For Ported 243 Heads?

I was able to pick up a nice set of 243 heads that are ported for my LQ4 6.0. I'm going to have them milled down .030 to boost the compression. They can throw in new valves on the cheap while its being milled. Would 2.10" intake and 1.60" exhaust valves be worth the $300 price?

You would need the seats replaced to go that big. 2.02” is the biggest I would go on the stock seats, some would say 2.040” works, but 2.10” is definitely too big. It would basically put the seat on the aluminum and wear it out quickly. 1.60” is ok for the exhaust though.

Plus one for 2.10” hollow Katech valves turned down to 2.04 on the factory seats

Not at all; you just have to scale back a bit on intake valve size. 2.10 is just a tad too big. 2.02 is a very common, AND effective size.

the combustion chambers are simply not shaped to properly unshroud that large of a valve and if opened up; compression ratio will suffer. The larger the valve; the larger the dinner plate in the way of flow. The runner size and shape is only one part of the total process. Getting the most flow from the smallest valve provides the greatest velocity.
If the bowl and chamber are shaped correctly to flow past a larger valve; you still need the cylinder diameter to be large enough to accommodate what the head is trying to do
