Default Long Awaited Start Up

I have been building my truck for almost 2 years and the engine has been built ready and sitting for about a year.... I used proper assembly lube and kept everything sealed up just wondering if there is anything further I should do or just fill it up with oil and crank it?

Get some fogging oil and spray the cylinders down and rotate the engine by hand a few times to get a good film of oil on the cylinder walls. You could use engine oil if you're careful to not put too much in the cylinder but the oil will likely just stay on the lower side of the piston and not coat all of the cylinder all the way around (pistons at a angle with the engine standing straight up and down). Or do both, whatever makes you feel good and gets oil on the rings.

Before starting it up, leave all the injectors unplugged and crank the engine over a few times to get a bit of oil primed, fill the filter with oil too before starting. Mainly you just want to have everything have some lube on it first.

Then fire it.

If you have a strong drill and strong arms you could put a socket on it and hook it to the crank and get it spinning fast enough to actually build oil pressure and lube some stuff. But you gotta be real careful on this one, easy to hurt yourself. I've done it before, it isn't as bad as it sounds but I hate to recommend it and someone approach it all doofusy and get hurt. Brace the drill strong and start slow and build speed up it'll get going and pressurize and oil up everything.
