Piston to valve contact - need cast vs forged pistons advice

Some pics of the pistons close up. Just for clarification, the engine is from a 98 LS1 Camaro. The new CNC 62cc heads are in my possession, but have not been installed yet. So when I opened this up, it was the first time I had a look at the combustion chamber, and the engine appeared totally stock when I got it on a pallet. All the original equipment was installed, etc.
So one question I have is related to compression ratio. When I got the heads I got a .040" Cometic MLS Headgasket, which would have made compression 11:1. Now that I'm looking at some dished forged pistons, compression will run close to 10.6:1. I'm considering a .030" gasket which would bring compression up to around 10.8:1. Various compression calculators don't agree, but it would raise it about .2 to .3 is the guesstimate. I should just call TSP to confirm the As Cast CNC heads have enough piston to valve clearance for this, or if there are any other downsides. The valves are tilted a couple degrees more to allow more piston clearance, and the pistons I'm looking at have valve reliefs so I think I'm totally fine. As far as combustion chamber "squish", is a .030 gasket too extreme?

I see burs around the perimeter, burrs come from drilling/cutting. An impact wouldn't leave a burr.
.030 is too tight on the headgasket IMO
Read up on quench, just good quench or best quench something along those lines.
Personally .040 is the tightest I would ever go and would prefer the .045 gaskets from WS6store

A friend mentioned checking whether the headgasket was the original factory one, or a new OEM one, and that there might be some numbers attached that could tell whether the HG was replaced - which might tell me if the engine has been opened up prior. Any thoughts?
