Default Should I be Worried?

I was driving the car normally the other day, when all of a sudden the oil pressure shoots up to 100-120 psi idle/driving out of the blue. When I got home, I shut the car off and came back 3 hours later and turned the key to "on", where the oil pressure once again climbed from 60 to 90 psi without starting the car. I then changed the oil and filter and turned the key to "on" with NO oil in the car and the needle/gauge read 55psi and climbed again.

WTF is going on? Sounds like a faulty sensor?

Yes. Even with oil in the sump, if the engine's not turning, there's zero oil pressure. The problem's electronic/electrical - sensor, gauge, etc.
