Default Head gasket material question.

What are the pros and cons of different head gasket materials?
How are the SCE Titan Copper Self Sealing gaskets?
How about the Mr. Gasket Ultra Seals that have the graphite cores?

I need head gaskets to seal up my h/c motor which will have Absolute Speed 5.3's and probably an F13 cam.

I know that with the pure metal gaskets they are much more picky about the head & block surfaces being perfectly flat.

The graphite ones aren't so picky about sealing.
