when measuring how far the piston sticks out past the deck...

Default when measuring how far the piston sticks out past the deck...

on a stock piston where should the measurement be taken?

On my replacement stockers, I found that the center has a slightly raised circular section and if I measure on that I get .012 out of the bore (pretty consistant across all 8 cylinders (which is the most I've really ever heard of for stock pistons)

If I measure just outside of that area I get roughly .008-.009

It is not the center of the piston you need to be concerned with. You should be measuring to determine the head gasket thickness you will need for the quench you want. That would mean you measure near the circumfrence of the piston.
