if i take them to a shop how should i tell them to port the heads? is there a specific measurement or something?

As far as head porting, The shop better know what to do. Just tell them your application (high rpm, low end tq, drivability, etc) and they can port accordingly. Just hogging out tons of material might increase runner volume but not increase flow (or velocity). As a general rule, smoother runners with fewer angles will give you better VELOCITY which helps low and high end performance.
