What would be a good compression to go with???

I am going to get the engine built but was wondering what would be a recommended compression to go with it.
I want to get the max efficiency from the engine.
I am getting a 382 All bore, Stage 3 heads, MTI R1 cam, and upgrading pistons and rods.
The guy that is going to build the engine builds engines for the Houston speed shops.
I am planning on spraying about 150-200 shot.
If I got to go to a higher octane gas, I really don't mind because this car will be a weekend car.
What would be a good octane to go with???
The only thing I am going to hate is paying $6 a gallon.

Personally if you live in LJ I'd go a little conservative, like maybe 11:1-11.3:1 and maybe mix a little race gas when you spray. If you lived in a cooler climate you could get away with more compression.
