Will dropping the cats hinder performance?
What are the draw-backs, if any, other than throwing a check engine light?
This will be done on the Firehawk. I wanna test the noise-level before I drop the headers

I don't believe it will mess with anything since it'll give bad readings to only the rear O2's. That's just emission crap. The front O2's are the important ones, so I think you'll just have an SES to stare at. I would expect the performance to be fine.

Someone told me that it might smell a little funny. Is this true? If so, will this smell be from the exhaust only or will it be evident in the interior?
