Default Removing the erg valve.

Is it safe to just completely get rid of the ERG valve? Would my engine knock,bing?

If you’re referring to an EGR block off plate, you can do that. But unless you get custom tuning you will throw codes (SES lights). ’01 and up models don’t have EGR to begin with. Are you trying to use ‘98/’99 model year headers on an ’00 car or something? Why do you want to ditch the EGR? You can just cut the tube down some (it’s one of the free mods) if you think it’s a blockage (debatable whether or not it makes any difference).
