Traditionally, due to intake design and firing order, SBCs generally got the most n2o in #6, causing it to lean out slightly (in non-direct port configs). Otherwise #7 used to be the leanest in LT1 configurations. The velocity of the air cuased it to pack #7 the most. I dont think anyone has studied the LS1 enough, but I'd be surprised if in N/A applications any of the cyl's are much different.

Therefor, I would choose as far back of a cyl as is realistically accesible, and bung a 1/8 npt approx 1-1.25" from the flange. THe probe itself will be adjustable in depth, and you will get different readings in how deep you place it, but I had good luck with 1" or so of probe in the primary.

You sort of have to imagine that you are targetting the tip of the flame that is exiting the port...
Good luck, and let us know what you find.
Worst comes to worst, you can do what several Sy/Ty folks did, and buy 3 Westech 3 in 1 EGT guages and bung all 8. We only had to buy 2 to do all 6 though <img src="gr_stretch.gif" border="0">
