You should be more than fine with that setup. That should give you an additional .050" clearance. I still don't understand why you can't notch the pistons a little. It would take less of a cut than you would think to get an additional .050" clearance due to the valve angle. I would do this before altering the valve seats anymore. Anytime you mess with the seat, you are messing with flow. It would take 2 hours tops to notch all the pistons and re-clay for a clearance check. Just my $.02 but it was too easy on the last LS1's we've done.

It looks like you got a lot of good advice. I too would save the heads. Any idea of the compression?
You said you were disapointed in the torque. Your stock heads don't flow enough to gain a lot of torque from the high lift of your cam. In fact the HP is really good. Good flow, tuning and exhaust manifolds are needed for torque.
