Removing the motor isn't too difficult. It sure would make it alot easier to swap the bolts. You will have to lift the motor off of its mounts to get the oilpan off, the oil pump pickup tube is a pain in the *** and gets in the way. Gotta remove that with the pan dropped down a bit. Then you just have to remove the windage tray. Rod bolt swap should be accessible then.

possible yes, a pain in the *** YES why not just yank the motor and put new bearings and rings in while you are at it.

Your are talking about connecting rod bolts?
Aren't they pressed into the rods? Meaning you would have to press them out.
I don't know about the LS1 but the rod bolts on older SBC's are pressed in and I wouldn't think about trying to change them without disassembling the engine.
