Default race gas

If an NA car dyno'd say 400rwhp on pump gas, then later on threw in 109 octane and retuned, how much more power would it pick up?

A few maybe if you bumped up the spark advance. if you were experiencing knock retard in the first place though then you will pick up more if the fuel and tune stops the knock retard.

I would expect a no hp gain. The only reason you would need a higher octane fuel is if you have the compression for it and are having issues with detonation and retarted timing. The higher octane fuel actually has a slower burn rate.

I know this sounds crazy and I came to this forum for the sole purpose of finding the truth to a statement I heard the other day: ......"The LS1 and other "coil-on-plug" vehicles have the capability of advancing the timing by itself based on octane level, because of a sensor in the gas tank". Dont get me wrong I have no idea if this is true or not. For instance by adding race fuel it would automatically advance timing?

You will actually LOSE power! Higher octane fuels burn slower. If you don't change the timing or compression, you will probably lose power. Just my opinion.
