When I broke one of my duel springs, it was very noticeable!! Loss of power and I could tell a cylinder was not firing. This is because the intake valve would not close.
For others, I have heard of different symptoms ranging from a sound like an industral sewing machine to being a valve and damaging the piston. The later is very obvious

Ok...how do you know if someone shoved a baseball bat up your ***? Answer: You will KNOW!
The same applies to a broken valve spring. When it happens, you will know.
-Flashing SES
-Valve train clatter from hell
-no power
-Rough idle
-Engine shaking like mad
To confirm: Once you've pulled the valve covers, sometimes a broken spring isn't obvious (especially the back springs under the cowl). So you should attempt to spin the Valve springs with your fingers. If they're good, they will not turn....if you can spin them, Bingo! Broken spring.

Ebbs is right on
mine broke right after a WOT pass when i was crusing down the road. I swore I heard a pop or snap. But right when it happened it felt like I lost a plug or wire. Car stumbled badly when i applied the gas. I got home and idle really seemed about the same(couldnt really tell with cam)
I hooked up atap, figuring its a bad plug. No chattering or any weird sounds from engine bay(cant be broken spring could it?)
log misfires and cyl 4 has roughly 100 under current history. Figure bad plug is on that side and either 2, 4, or 6. Replace those and wires. Still showing misfire. Pull vavle cover. Hmmmm everything looked fine. Turn the #4 spring exhaust port and it twists around. She snapped half into but will still perfectly in place.
find the side with misfires on atap. Pull the cover and you will find out. Car also will start like hell. Seems like it has no power or anything on startup.
I have a few pics on my site of my broken one...

A real quick way is to hook up a vacuum gauge to intake & check at idle. Engine miss due to fuel or ignition gauge will be steady, broken spring intake or exhaust gauge's needle will be boucing rapidly.
