Tuning after camswap

Tuning after camswap I just did a cam swap on my car.....I got the G5X1E cam from lg because its made to pass emisionstesting. The specs are a secret but its something like
228/232 580-600 lift 115LSA. The car sounds real good, not to much loop....but it needs a tune.
How is it best to tune a car?
The guy that is gonna tune the car does not do it on a dyno.....he drives it and tunes after real driving conditions.....Is this better or worse than dyno tuning.....
