I plan to buy this car and drive it all day every day when it's nice, they get stellar mileage to begin with so what drivability/fuel economy am I looking at losing vs. a stock C5 Z06?

It all depends on the tune and your personal opinion on daily drivability. If you can keep your foot out of it, it should'nt drink too much more gas, unless you do alot of city driving. Then it will be considerably harder on gas. The tune also plays a huge part in this too.

I have a similar H/C set minus the transmission and gears, I would be hard pressed to drive mine in city traffic everyday.
