what heads do you have? are they ported?
is this a new built shortblock?
I am asking because I have the same problem with the oil gauge not beeing steady. I have not taking anything apart but I know that I do consume about a quart of oil every 3 weeks with daily driving, the thing is that there is no smoke out the exhaust and also the spark plugs are getting some oil.
did you check your plugs?

THat was a couple years ago bud! The cam bolts backed out and was losing pressure with cam walking back and forth uncovering oil hole.

Ive also seen people leave out the front freeze plug behind the timing cover, torn o ring on the bar bell plug in the back too.
