What weight oil should I use for my brand new motor I just built?

dont run synthetic oil or blended syn atleast for the first few changes at the very least
500mile then 1200 mile first two oil changes with filters mantatory.
(unless the engine was run in and tuned on the dyno prior to hand.
use cheap 6-7 buck oil 30 to 40 grade ok with a quality oil filter
there are certain special running in oils which for the xtra premium id rather save the coin and put it towards fuel and do as much mileage to run it all in sooner.
besides the idea of break in is exactly that,the first few changes will see alot of micoscopic metal waste associated with the expected wear plateu from within
the engines internals.

SO run straight SAE 30 oil with a Fram filter for 500, then change it, and the filter. Then change again at 1200 with the same stuff.

I'd snag a Bosch filter instead of a Fram, better filtration media and construction but still cheap.

For the oil, plain 5W-30 instead of straight 30W given the weather up here. Wal-Mart's SuperTech is cheap and does the job well.

stay away from fram, they use cardboard filtration, delco or mobile 1 filter should be fine
