There are many methods. What you describe should work. I prefer to move the vent as far away from the engine as possible so I can slow the PCV flow and allow for carry over oil to drop out of suspension. Locating the breather on the valve cover places the exit point at a high activity area (lots of oil splashing around in the valve cover area), naturally providing carry over oil an easy path out.

Well, I did it a little different than I stated earlier. On the LS7 engine the valve cover oil cap is fixed in place and oil is added at the dry sump tank. So I replaced the oil cap on the dry sump tank with the breather, very little activity there, and way to the back of the engine bay. Seems (short term) to be working fine. I'll post if it changes.

so ive read through this thread a few times. to keep it simple i can just put a breather in place of my dry sump oil tank cap and my oil consumpstion should go down drastically?

this is one part of my build i just simply did not think about (good things i'm still in the building stages lol)...I plan on converting to wet sump and running a carb'd efi setup with a 4150 throttle body. Now, i haven't done much research on those TB's, but would i essentially be running the same tee'd hose setup as described?
