How do I modify LS1 valve covers for LS7 heads (or should I)?

How do I modify LS1 valve covers for LS7 heads (or should I)? So I've learned that the baffles in the passenger side LS1 head cover interfere with the offset rockers of the LS7 head. I've read a few posts and they say "modify and grind" the baffles. I have two questions:
1) Are the stock baffles completely removed? Or are they clearanced?
2) Is there any downside to this modification? I'm not against buying a new set of LS7 head covers if I think there will be a performance or safety issue with modifying the LS1 covers.
