If do end up boring it over how much do i need to bore out to a 408?

Keeping the VVT would be easy and probably to your benefit. If you're talking about putting 241 heads on a block that originally had L92 heads (which flow better than the most hogged out ported 241 head) then I'm guessing money is an object. Keep the VVT, get an e38 ECU, swap your old LS1 oil pan, windage tray and pickup tube over, get a L76 intake and you're in business... Still, I'd try to get a pair of L92 heads.. they're just so much better.
and I'm not sure why that guy with the picture of that Vauxhall VXR in his avatar was calling you gay...? That seemed kinda pointless.
oh, and don't bore/stroke it... that also seems pretty pointless. For that kind of money you could super/turbocharge.
