Default 5.3L Long Block (RPO LMG)

Newbie here and I need some help. I'm buying a low mileage (6000 mile) 5.3 long block. Its too good of a deal to pass up., it has no intake manifold, injectors, or accessories. The engine is going into a 61 Bel Air, and I'm going carbureted. Edelbrock manifold, with MSD engine controller and 750 cfm carb. My question is I want to delete the AFM and VVT, and I would like input on what parts I need to get to accomplish this. I want to go with Comp Cams XFI XR275HR 3 bolt cam. What other parts do I need for the cam swap? Also, what do I need for the AFM delete? Any help in this matter would be greatly appreciated.
