Default pistons/heads for LY6

I have recently acquired an LY6 shortblock. I'm looking at putting LS3 heads on it. However, I don't know how much the pistons are dished. I want to know what size Combustion chamber i should run on the heads for optimal compression.

There is no "optimal compression". It's what you want it to be.

Pistons have reliefs of about 2cc.

I guess I should specify. I'd like to run between 10.5 and 11.1 but i'm not sure if that would be possible with these pistons. This is going to be a NA build with a possibility of running a small shot of nitrous down the line. Any advice is appreciated

That sort of compression is definitely doable with some head milling and thinner headgaskets. Just don't go crazy with the cam and you should have plenty of PTV (especially with some valve reliefs already built in).
