Default Biggest cam an LH6 dod delete can handle?

I'm building a 5.3 LH6 with 243 heads for my 75 nova with a close ratio super T10 4 speed, 4:10s, 29 inch tires, and manual brakes.
I've lightened the front of the car up some by removing the wheel wells, battery relocation, heater core delete, soon to ditch the steel front bumper and collision shocks for s fiberglass bumper.
I need new cam bearings and need to delete the D.o.d. while I'm at it. I want to build the nastiest N/A 5.3 as possible that I can drive on the street.
I'm going to get long tube headers and starting with a carb set up. I am prepared to get new pushrods, springs, and rockers to match whatever cam I choose. I want a choppy idle and a high revving engine. I have some ideas but I'm curious what your suggestions might be. This is my first LS build so I'm still pretty green.

Any of the shelf "Stage 3" cams would work fine for you
I ran the summit 8702 in my 6.0 with carb and LOVED it.

​​​​​​That might be a winner. Valve clearance might be close because I have flat tops. I'm getting hone and new rings already anyway so if I have to have my pistons fly cut it's not the end of the world.

Should be fine, I ran a .045 head gasket with flattops and didnt have any issues.
