Having the top off won't do any thing to help MPG wise. Every thing inside the cab will catch air. Having said that nothing is better than cruising with the top off/down in the summer.
You may have the Dana 44 already but a popular swap is the 8.8 out of an Explorer. 4:10 and 3:73 with a posi are easy to find. Need to buy a bracket kit but they easy to find.

That is a beautiful Jeep and swap! I did have a 3.73 Posi 8.8 from a LS swapped XJ I had for a bit but ended up selling that since I got a great deal on a D44 with 3.73. Non-posi, but the amount I paid for it I could get a Tru-Track LSD and still be ahead. This is my swap as it sits with the 5.3/NV3550.
