What have we learned... RECAP:
Some people get 75 (exaggeration) mpg - because they can't add or only drive downhill
Some get 10 - because they drive the car like they are supposed to
Everyone gets somewhere in the middle - Because that is how it works.
If you are worried about MPGs go buy a ******* Prius, Civic, Focus, Cruze, aka something with a 4 banger not a V8!
Some of us wanted a big car with performance that gets decent mileage. I don't know about yours, but my Impala carried an EPA rating of 28 Highway/18 City. This had an impact on my purchase, since we drive 100% highway to the tune of a 1000 miles per week. Had we known the car was going to get 24 or so on the highway, we would not have bought it. I'm just speaking for me. Can't say what other poster's motives are.
Anyway, with gasoline topping $4.00 per gallon in a lot of places, it's very reasonable for people to ask how they can better their mileage. After all, many of them bought their cars when gas was half this price.
I, for one, don't want a 4-banger. I simply wanted my Impala to do better. It does and it's because I gathered info and made changes.
Please don't tell us what we should buy, just because you don't like seeing the thread. If you have a problem with it, then just ignore it.
Gas is expensive, we all pay it and there is no way around it, other than public transportation. And even then you are paying the increase because when oil goes up everything goes up do to the costs to get it to you.
I completely agree with your post, and thanks for the compliment. EPA ratings are BS, I hope we all know that. EPA tests the perfect storm which almost never happens. More likely is a 10-25 percent reduction and based on the numerous posts I have read that seems to hold true. (fuzzy math in my head) Here is a real world solution for you. Drive less, ride your bike to work, etc. I do those things so I can keep my car and afford my car.
I should mention that yes you did make changes, which is good, you are one of the few that have. I commend you on that. Most come on here post about it and guess what. They don't get a tune or a KandN or any other mod. Heck they probably don't even feather the pedal. They just expect the car to get the mileage the EPA tells you. I am sorry to break it to people but the government is not a fountain of truth.
To close bitching about mileage is like a being in a rocking chair, gives you something to do but doesn't get you anywhere. So to address your don't tell us what to buy. Buying one of those cars will get you farther on the same dollar, just providing you a solution, a solution that will work.

I would agree, the LS series motors other than the LS4 have been an MPG "miracle" in regards to performance vs MPG. (The Vette takes the crown but that has a lot to do with weight) Like you said, it has to be that converter and possibly the 4 speed trans, there just don't seem to be enough other differences other than DOD, which other motors have. And on the subject of DOD, Lew has pointed out DOD has mixed results. For some-most (no accurate statistics) do better with it disabled.
My highway mileage went up anywhere from 3-5 MPG, but it's more likely that the removal of that cat and the updated DiabLew tune had more to do with that than anything else.
Remember, the converter is locked at highway cruise, so any change in stall isn't going to impact MPG at those speeds.
The tighter converter does feel better in town, and the car doesn't have as much slop in the throttle. It also has a little creep now. So, drivability is much improved.

EDIT: actually I see all you have is a drop in, that shouldn't affect mileage. I would check mechanical condition. IE, plugs, wires, O2's, injectors etc.
