I drove the car to the shop (to fix a fan issue), so I never got it on a long cruise but I noticed that the temperature climbed slowly, as expected. I will know more in a few days how it cools.

The cooler I got, came with everything I needed. I should never have bought the extra hose (Hayden 106), as I had plenty left over.

You might want to go back and check your fluid. There's no way possible a cooler gets installed without needing more fluid

How much will it hold? I would be surprised if it can even accept half a quart max. I didn't notice enough difference on the stick; it was still right around the full mark. When I get it back from the shop, I'll double check it.

This might be obvious, but the transmission fluid needs checked while the car is warmed up and running, and after its been ran through R/D and then back into park.

That is possible I suppose. I checked the fluid after driving it fully warmed. I turned the care off, popped the hood and checked.

FYI, today was the first day I got to drive my typical 65-70 minute drive to work.

Before numbers: 195-205 average
After numbers: 155-165 average

A 35-40 degree drop!

I also notice that the trans temp gauge shows a bit warmer than actual. I can have the car parked for days and it shows about 7-8* over ambient.

You didn't check it correctly, do as Sint3k said, make sure it's warmed up and leave the car running when you check.

Will do. I'm just used to most that have a hot and cold line marker.

Checked it again after keeping it running and it was low a good solid quart.

How much will a dry transmission hold of Dextron 6? I'm needing to buy some for the new transmission.
