Do you just have 1 set? Also what size pushrods go with these on stock un-milled heads. (853's)

I have a few more sets of valves. These are the lightweight 02+ LS6 valves.

Stock pushrods on a stock 02 LS6 cam.

so on a stock cam ('99 camaro Z28) or a aftermarket cam I would have to use 7.35" pushrods?

Stock length is fine. Stock cam,use a 7.35. In all honesty, It isnt much of a difference to really be a problem.
