Default Couple of Questions...Help please!

Question number one: What is the stock fuel pressure for a 97 LT1??? I just installed a Fuel Pressure Gauge, and mine is running 47-49 lbs right now. Is that normal or no?

Also, I have AFR heads...would it be better to go with ARP Head Bolts, or the stock T-T-Y Head Bolts???

Stock fuel pressure is 43.5psi
Seems like your fuel pressure is high to me.

Should be around 41-47psi

I know I have an adj, fuel pressure regulator on it, but I have no idea what it is set at...apparently around 48...is it bad to run such high FP with my setup, or is it ok?

best thing to do is put it on a dyno or get a wideband, a real A/F ratio reading will tell you more than a fuel pressure # as far as what is rich or lean for your setup

FYI stock fuel pressure is 40~ psi at idle and 43~ psi at WOT

First, I prefer to run ARP head bolts. They can be re-used, whereas the TTY bolts must be replaced each time.
Second, altering the fuel pressure changes the output of the injectors, artifically increasing their size. IIRC, your 97 should have 24# injectors stock. The equation to use (borrowed from RC Engineering):

New_Flow_Rate = Old_Flow_Rate x sqrt(new_pressure/old_pressure)

[sqrt stands for square root. You probably knew that, but I just wanted to be complete.]

So, the equation would be:
New_Flow_Rate = 24# x sqrt(48/43.5) = 25.2#
Not really a significant amount, but if you were to increase it to LS1 pressure (58 psi) they would now flow 27.7#, which is a significant difference.

Unless you were needing to change the injector size in this manner, I don't really see what it will gain you by altering the pressure from stock.

not trying to alter the FP...I WAS gonna get 30# SVO injectors for her, but I dont have that much power. Ill be between 400 and 500 when I'm done and stocks will be fine for that. I just wanna make sure my pressure is ok or not so I dont end up with problems...I think I am good with 25.2# for now lol. If I ever decide to supercharge it then I will worry about higher flow injectors and all...till then, im content...
