What year is your car. OBD1 I believe you can just unplug the damn thing. That's how my car is...

It was the case in my LS1 car at least (sounds the same with the OP). I'd go to shift from 1-2 between 2,000 and 2,500 RPM and it would try to skip into 4th. As the OP described...it was obnoxious and somewhat embarassing. I'm sure people watching me leave the line were thinking "damn...that clown can't shift/drive." The only alternative (before getting the SSE) was to accelerate harder so that the computer wouldn't try to pull that.

Under real light acceleration I could avoid it, but it's usually lighter acceleration where it kicks in. I would just step on it to avoid it, or wait to shift until my RPMs were higher. So glad I don't have to deal with it anymore.
