The LT1 can be a fine car if you don't mod it too much or beat it and can keep up with it's quirks.
Yank that engine and do a proper re-build. 383 it and get a nice cam & set of heads.
Oil pressure should not come into play with an engine barely running at 300rpm. IMO it's a timing issue, but throw a FP gauge on it and see if the pump is going south.
