Default 160 thermostat?

I have been told that a 160 thermostat will cause my 1997 lt1 trans am to run slightly rich. Is this true even with a dyno tune?

No thats not true at all. Its good to tune for it to let the fans come on earlier and take full advantage of it but it have nothing to do with anything else

This is what I thought. A few people have that if it is too cold the car will not go into closed loop, it will stay in open loop and run a little on the rich side.

The stock temp for closed loop is ~140°, so it that's not going to happen. Normal operating temp is generally going to be 15°-20° higher than the thermostat temp on a moderate ambient temperature day. If you are in a cold winter climate, you might want to keep the 180° for the winter. Temps will stay closer to the thermostat rating when it is really cold out.
