does carbing an lt1 require getting rid of the opti?

I am trying to figure out the easiest, and cheapest way to put my cammed lt1 into my grandpas old 78 chevy 1 ton flatbed dually.
doesn anyone have any idea what all is involved in this? is it easier to use the computer and harness, or go old school and get rid of the ecu and harness (what would i have to do to do this) truck currently has a 350 and a th400,
also i have a dual plane intake manifold, how much does it cost to have it converted?
lt1 is rebuilt with 242 242 52 572 112 cam, new bearings, rod bolts, head studs, roller rockers, springs and lifters, and pushrods.

Im not sure about converting the manifold but that cam thats in there will probably be pretty soggy down low may not be the best match for a 1 ton dually.
Did a smaller cam (233/239) in my friends truck 06 4 door silverado with an LS1/T56 swap and ran a 4.56 outback and its still pretty soggy down low, only been together like a year and he already wants to go to a 5.11.
Its on a 31.5" tire, and weve even got the factory truck manifold on it to pull the powerband down a little. Runs Great up top, but not so much down low.

Yes. GM used to sell( might still sell it through performance parts) an intake set up for a carb and a distributor I believe. I think a modified timing cover is still available too.
