The more you take off the smaller the CCs become, but there is no magical formula. You'd have to have the combustion chamber volume measured (CC'd). Over-milling the heads is not an accurate means of increasing compression. Just get a gasket that gives you the compression you want.

I decided against milling the heads, instead I just bought a set of the .026 Mr. Gasket HG's you mentioned
