Default LT1 extended crank to start after a few hours of sitting, ECT?

Here's some of the symptoms and overview of the situation

-Every morning, car fires up instantly in one pop

-After turning off and restarting, starts a second slower maybe

-after turned off and left for an hour it sometimes takes like 6 seconds of cranking to start

has a new opti, icm, plugs, wires, fuel pump, coil, fuel pump relay, some other things too.

The car has 140k miles, runs fine doesn't misfire.

Also everytime after i turn the car off, and then right afterward turn the key to ON engine OFF, the temp rises to 210 degrees instantly, and when the car is started it drops to 180, has a new thermostat and runs at 180 all the time.

Is this is a sign that the ECT is bad? it's been happening since i bought the car 10k miles ago.

Temperature gauge on the dash gets a reading from the temperature sensor in the side of the driver side head. No input to the PCM from it. But a bad ECT can cause excessive cranking.
