PCM is saying "hm the MAF is telling me a lot more air is coming in, the o2s are telling me its running lean, I better compensate. Crap I hit the max for my compensation and I can't compensate anymore, yet we are still lean."
Engine then says "Yes we are running lean! Time to burn some valves up and destroy stuff!"
As stated above get a tune.
Its the opposite of putting bigger injectors in without a tune.

Mail order tunes are not junk. Maybe do a little more research on the topic.
With major modifications such as a cam, you are risking damaging your engine with a stock tune or at the least causing unnecessary wear on engine parts, nor will your engine perform nearly as well as is could with even a base tune. A mail order tune is a "base tune" to get you where you need to, such as to the dyno tuner. For a simple bolt-on only car, a mail order tune is likely all that is needed, and is surely recommended.
Popular mail order tuners would be pcmforless or Moe Bailey (Moehorsepower), Ed Wright might do mail order tunes, though I'm not sure. For my LE H/C/I 355 build I had TPiS do my base tune and I think they did a great job.
