That and also you don't have to worry about some little bastard bashing the **** out of your car after you drop it off, I don't think I will ever drop my baby off at a general auto mechanic

Thanks guys, FYI I have a very good shop and its family, so they don't charge a whole lot, anywayz got the gaskets and got it together, had a problem in the garage before I lowered it with over heating, major concern was fans never came on, and it was hot, let her cooled down and lowered it, topped of and no ran it, gets to about 210/220 then comes down, driving it around it barely does 180, put about 15/20 miles on it, everything seems cool, but still concerned that the fans never came on, my next question is should I run a different thermostat? or is that just modded cars?

gopnna take it for a nice ride tomorrow and see what happens, start the polishing process this week in the garage at night, and get the engine compartment cleaned up

The fans are not coming on, because they have not reached the factory temp for the to come on. That would be 226°. Everything you describe above sounds normal.
