Electric Water Pump Cooling Issues

Adding a pusher fan in front of the inter-cooler may or may not help. If your temps creep up during highway use (usually when they are the lowest in most cars), odds are it's not air flow (there is a TON of flow at highway speeds, so long as your air dam is installed and functional).
I'd lean towards the EWP as the culprit. You have two options, return to stock or get the HD EWP. If you plan on road racing, mechanical all the way. If not, just a street/strip car, the HD EWP should to the deed.

Well I took the car on its first long haul trip over the weekend up to the Hot Rod Power Tour and my coolant temperature did not exceed 200 degrees. Once we got stuck in traffic heading into the venue the temps dropped right down to 180. Considering returning to stock is not an option for me (24x), I am going to install a Meziere HD pump and will report back on whether my situation improves. On the plus side it was a relief knowing that the temps did reach a ceiling at an acceptable level and refused to climb higher.
I did however screw up when I told you all I was running a CSR pump. It's been 4 years since I've bought the water pump and when I was reseting my valve lash yesterday I noticed it is actually a PRP pump. Nonetheless I'm still going to purchase the Meziere pump.

Did you try running distiller water and water wetter? Water holds more heat than coolant.
