Your plans seem pretty good.
1. Hooker coated LTs are good, if you're willing to spend the money check out Kooks plans for some stainless steel LT1 longtubes. Also, I'd recommend checking out Jet Hot's hooker LTs as well.
2. Wait on the intake until you can either get the stock LT1 heads ported, or swap heads altogether. Then go with an LT4 intake and possibly have it ported. Any throttle body over 52mm will be fine.
3. Stay with the stock MAF. Aftermarket units are a pain in the *** to tune, and really don't yield that much gain.
4. A comp 306 and 847 will both use stock valves. But you will want to do drivetrain work. 1.6RR are a good idea as well to get more lift out of the cam you choose. I would recommend a racenet.net package, I chcked it out and it seemed to be a pretty good deal.
5. Be careful about the strength of the 10-bolt. You won't be able to go very far with it on drag radials and 4.10s.

im currently on jet-hot LTs, cai and the LT4 hotcam kit and i couldnt be any happier. I dont know how streetable the gm 847 or cc 306 are... but the hotcam in mine is actually smoother and the sound at idle is amazing. The characteristics of the car after the cam is much better, its easier to drive and much more rev happy. like i said im not sure what the other 2 cams would be in contrast to this, but i was very happy with the $500 LT4 hotcam kit, huge difference. (it came with the cam, 1.6 ratio roller rockers, valve springs and all the hardware)

58mm t/b is a little too much
I know you say that you want something more aggresive than a h/c, one of the most Ruthless Z's in South Houston has a h/c setup, along w/an s-trim though.
Loyd Elliot is the best guy to go to for heads
4.10's a good gear to run in a mod. out 6speed,
I don't care for Nitto's I'm an Et street guy
as for a camed ls1... well ask one of these other guys cause I really don't know. That is just my opinion
